Crock-pot Cranberry Pork Tenderloin

I got this recipe from another blog Tiny Tidbits, I have been looking for more crock pot recipes since I have been back to work so I can continue to have home cooked meals for my family.  I grew up with sitting down as a family for dinner at night and I hope to continue this as L gets older.  Its so hard though to cook on the nights I work so Crock pot recipes are the best.

This was delicious, and it really was a "fast" crock pot recipe as it only took 4 hours, you can do it on low heat for 8 though.

Crockpot Cranberry Pork Tenderloin

1 Pork Tenderloin
1 onion, sliced
1 packet of dry onion soup mix
1 can of whole cranberry sauce
1 Tbs butter
1 Tbs flour
black pepper to taste

Dump the onion into the bottom of the crockpot to act as a liner. Lay the pork tenderloin on top (you do not have to thaw the loin - just add cooking time), and sprinkle the dry soup mix evenly.

Spoon the cranberry sauce as evenly as possible over the loin and onions. You want the flavor to soak into every nook and cranny as it cooks, but it's not easily spreadable.

Put the lid on, and cook on high for 4 hours. Or low for about 8 hrs

When the loin is done, remove it from the crockpot, and set aside to rest on a cutting board.

Strain the juices that are leftover in the crockpot, and set aside. In a skillet over medium heat, melt 1 tablespoon of butter. Add the tablespoon of flour, and stir with a whisk to create a roux allowing it to get slightly brown. Slowly pour in the reserved and strained liquid whisking until well-combined. Allow to heat through and thicken to your desired consistency (a gravy consistency), sprinkle with pepper, and remove from the heat.

Slice the tenderloin, and top with the gravy

I think I should have maybe cooked mine for 3 hours, I was not able to slice mine, it just kind of shredded but it was still super yummy.  We ate ours over white rice and with mixed veggies

lil booger

We've had our first bought with illness.  Nothing major but nonetheless no fun for this mama to see her lil guy sick.

Since he was about he 2 weeks old he has had clogged tear ducts and thus has had small amounts of green drainage in the corner of his eyes.  It cleared up slightly and then about a week ago he just had large amounts of green drainage constantly oozing out of his tear ducts and when he cried...it would be so much it would literally drip down his face...so gross I know but reality.  I took him in and got some eye drops and after about 5 days its finally clearing up.

During all this he developed a little runny nose.  nothing major but he sounds congested and sometimes gets frustrated when eating.  He doesn't have a fever so we just wait it out.  I thought maybe it was related to teething but I have heard such mixed feelings Im just not sure.

In order to deal with the boogs I broke down and ordered this:

Nosefrida:

The concept behind this thing is disgusting and a few months ago pre baby I swore I would NEVER use this thing.  Well here we are now using this contraption.  You put that blue piece right at the tip of the nostril, occlude the other nostril, and suck like crazy on the red piece.  there is a filter piece that will keep the snot from traveling up the tubing and honestly if you had enough snot to even come close to filling that blue trap and getting to your mouth well you might need to seek some medical help because that would be abnormal.

This thing seriously works...I work in the NICU and we have suction that is hooked up to the wall and its some serious suction it can get some massive boogs out of these itty bitty babies that makes you wonder how they even have room to store boogs that big...well this thing works as good as the wall suction at the hospital, its really that good!!

Im a believer the ol bulb suction they give you at the hospital...throw it out and get this bad boy you'll be glad you did and the satisfaction you'll get when your baby can breath and you don't have to be constantly wiping their little nose will be AMAZING!

And because I just think he is the most adorable thing...I leave you with a picture of my lil booger

3 months...and a half

So I need to do this already before we hit 4 months... which is in like 2 weeks.  This past month has just been one big crazy adjustment with me going back to work.
So lets get to it!

Age: 3.5 months, 16 weeks
got my dukes up...better watch out

Weight: 15lbs

Milestones: L rolled over for the first time this past saturday which was Sept 10, 2011.  He was doing tummy time and just rolled over! He did it again 3 more times and I have not gotten him to do it since...he knows I'm trying to record it so he isn't cooperating.  He also grabs at stuff more and brings objects in his hands to midline and sometimes puts them in his mouth.  I am also convinced he is teething already.  I asked the dentist when I went this past week and she said her son had 4 teeth by the time he was 4 months...Lord help me and my nipples should this be the case!!

Eating: He is eating a 6-7oz bottle before bed on the nights I work and then 4-5oz bottles any other time he is hungry usually around 2 am and 6 am.  When I don't work I just nurse him and I am so glad that it is no longer taking 45 min for him to eat.  He will be done in about 10-15 minutes and I love it! It makes nursing him in public outings much easier as it doesn't take up half the day LOL

Sleeping:  He has slept ALLLLL the way through the night a few times!!! Like from 9pm till 6am and then sometimes back to bed till 930 or 10 am!! Its not consistent but such a blessing when it does happen.  We put him to bed awake and he puts himself to sleep.  Most nights he just stomps his feet a few times and then is out.  Some nights he will fuss a bit but usually its only for about 5 minutes or less.  We have also moved him into his own room.  I think this was harder for me than it was for him, He didn't seem to care one bit but now if we try and put him in our room he WILL.NOT.SLEEP so he stays in his room.  We turn on his white noise, his turtle light, the fan, and a lullaby cd and he knows its bedtime.  Also, we stopped swaddling him...my baby is growing up too fast!!! He has taken to all these changes like a champ and sleep time really is not an issue there have only really been a few nights here and there that he protests

What I'm Wearing: I am wearing size 6 months clothes from carters and some 3-6 month clothes in certain brands and some 6-9 month sizes...This totally blows my mind that my sweet lil man is getting so big, but I love that he looks so cute in all his button down shirts and blue jeans
Likes: L loves his playmat still, probably more now than he used to. He is also more interested in his swing now that he can sit up better and play with the toy bar that it comes with.  He loves to be outside and go on runs with mommy.  Loves to be walked around the house and talked to and also loves bath time, it doesn't matter how grumpy he is if you stick him in the tub he is a happy boy. Being naked, getting his shirt changed for some reason pulling a shirt over his head is the funniest thing to him.

Dislikes: Being left alone, being too cold, being put into the carseat, once he is in and the car is moving he is usually ok but should there be a stop sign or red light...its over and a meltdown ensues
My sleepy boy
I love you sweet boy and love to watch you grow and change each and every day, you are getting so strong and I love how much you love to be with me, it breaks my heart when I leave you and when Im at work I miss you like crazy, at least you are asleep most of the time I am gone.  I love getting to know you more and more each day you are such a sweet baby and I love every minute I have with you.

Widowed again

College football started last weekend which means I now become a football widow until January.

It is slightly exciting because University of Texas in San Antonio, where I started college joined Phi Mu and met my hubby and most of my friends today, now has a football team.  We ALWAYS used to wish we had a football team and finally the year has come.

Hubby went to the first football game, I wanted to go but my bestie and lil sis in my sorority had her bachelorette party the same day and honestly I would rather ride around in a limo, do some wine tasting, and hang with my girls who I NEVER see than go to a football game...sorry hubs :)

We did go down to the riverwalk in San Antonio for the pep rally that was held on the night before the big game

We won our first game and also broke a record for the most people in attendance at a first football game with 57,000 people so that was pretty cool

Either way my hubby and TV will be unavailable every saturday from now till January

Hello!

Ugh I can't believe how much of a non poster I haver been lately, I  have  so much I  want  to post about but it has been a bit of an adjustment with going back to work,  spending time with my boys and  tending to my housewifely duties.

So for now I leave you with some cuteness

I'm Katie a 27 year old mommy and wife. Welcome to my blog where I will chronicle the happenings of my life as I find the balance between being both SAHM by day and CVICU nurse by night.

I love Jesus and strive to be more like Christ every day. Running, reading, and cooking are some of my favorite past-times. I love photography but I am no pro, but it helps I have such a cute subject to practice on!!
